Patriots’ coach Bill Belichick is known for his mantra, “Do Your Job.” For noted baker George Montilio, that meant cake.
“I just got so excited,” Montilio said of New England’s epic Super Bowl victory. “When they won, I called my guys and just said, ‘We’re gonna make Tom Brady out of cake!’”
So the team at Montilio’s Baking Co. of Brockton created a life-sized cake of the Pats’ star quarterback.
It took 130 hours to make the 6 ft. 6 in. tall, 250-pound cake of the Super Bowl MVP holding the Lombardi Trophy.
“It’s not like we had a [Tom Brady] mold,” said Montilio, the company president. “We had to carve a lot of it by hand.”
“Cake Brady” has a torso made of white cake, covered with 50 pounds of fondant icing depicting TB12 in the white-and-blue team jersey. His arms and legs are made of Rice Krispies, Montilio said.
“Cake just wasn’t strong enough and couldn’t bend the way we wanted,” he explained. “We’d heat the Rice Krispies up, put them over these pipes, and let them cool. Once that happened, we could cut away the parts we didn’t need.”
Starting Saturday at 10 a.m., the cake will be on display at Montilio’s store on Granite Street in Braintree.
